Baked Broccoli Nuggets recipe. Easy and Healthy school lunch box snack idea. 5 ingredient recipe. We call it as HULK green nuggets. Kid friendly food.

When my son was in preschool, he had a very good friend called Jeremy. They both were like buddy buddies. They used to eat their lunch sitting next to each other, share their lunches, sleep next to each other during nap time, be there for each other the whole day at school. I wished they stayed together forever. But life, as always had other plans. Jeremy moved to France the same year we moved back to India. But, this Brocolli nugget has stayed with us as a remembrance of all nice things we enjoyed in USA. “Food is nothing but memories.”
Longggggg back, like any other day after preschool, Vedant told me about his day at school. Usually it would be the castle that he built or the monster that attacked or the things he did at school. But that day he was so excited to talk about the Hulk nuggets that he had from Jeremy’s lunch box. I asked him, what was Hulk Nuggets? He told, Mommy, they were green Hulk nuggets. Jeremy told me that Hulk eats green food and that is why Hulk is green in colour. Green food gives a lot of muscles. So I also want to take Hulk nuggets to school. First I thought it was something to do with spinach. I saw Jeremy’s mommy a couple of days later at school and I spoke about the hulk nuggets and wanted to know more about the brilliant idea. She told me it was Broccoli Nuggets, and the naming I thought was a genius to get kids eat more veggies. Here is the picture of Hulk Nugget eating Super Heroes gang from school.

Add in the shredded cheddar cheese, one egg, Pepper powder and Garlic Powder. The cheese itself is salty. So no need to add additional salt to this mixture. Combine all the ingredients well. Line a baking sheet with parchment paper. Lining is important so the patties do not stick to the pan after baked. Make 2 inch patties and line it on the baking sheet.

  1. Nutritional info says 63 calories per serving, but I couldn’t find how many patties equal a serving. Could you share? Thanks!

    1. If you have the app “my fitness pal” you can put in the ingredients for any recipe and how many servings and it will tell you exactly how many macros and calories.

  2. How many are in a serving. I’d like these for snack. In weight watchers this is pints per serving.

  3. I really want to make these, but I can’t find a consistent grams to cups conversion! Is it 4 or two cups of broccoli?

    Thanks!

  4. Hi. How long do these last if refrigerated? I’d like to make a bunch for the week ahead of time. Thank you!

  5. Could you provide the cup measurement for the broccoli and cheese? Mine didn’t seem to bind well together so I added an extra egg but they became soupy soon after in the oven. Thanks!

  6. What can I use instead of egg to not compromise the taste. My lil one likes brocolli , i m sure he will like these.

    1. You could try using a flax egg. I use them in my baked goods to give my kids an extra boost of health fat. Mix 1 TBSP flax seed meal with 2.5 TBSP of water. Stir it well and refrigerate it for at least 15 minutes. It will thicken to the consistency of raw egg.

  7. Is there anything else you can use besides cheese or a cheese substitute? My step daughter is lactose intolerant but I think she would love these. Thanks!

  8. What a brilliant idea! Going to try this with my kids… They are super picky right now. Do you steam the broccoli first or just chop it up raw?

  9. Hi! I wondered if you use raw broccoli and raw eggs? They look cooked in the picture and I wasn’t sure..

  10. Love this recipe. Earth’ Best has a broccoli and cheese nugget. The problem is that they are frozen and that I like making foods from scratch. I searched high and low for a recipe similar and came up empty handed, until I found yours! My 2 year old LOVES these… And I enjoy eating the leftovers!

  11. These sound like a magic way for ME to eat MY vegetables. I will make today. I love food from India and so does my vegetarian friend, to whom I’ll send this recipe. Thank you for sharing.

    1. Hi Saranya, The broccoli might not cook fully if shallow fried and by the time the broccoli gets cooked through, the cheese might burn. But I have posted another very similar recipe. For more idea as to how to do it, Please refer to this recipe http://kannammacooks.com/cauliflower-vadai/ for shallow frying. You can substitute broccoli for Cauliflower. Hope this helps.
